POLYPHENOLS LEVEL: 1,573 MG/KG. This extra virgin olive oil is made from the cold extraction of 100% Chetoui olives. Chetoui is a 100% Tunisian olive variety constituting 20% of the Tunisian olive oil production. The variety is famous for its robustness (bitterness) and high polyphenol values. The large trees only give olive fruits once every two years. This olive oil has a robust character with aromas of freshly cut grass, artichoke, and rucola, and has a high pungency (spiciness). It pairs well with eggs, vegetables, meat-dishes, stews, and flavorsome cheeses.
